Chicken Parmesan with Penne
1 to 1.5 pounds chicken breast strips
26 oz jar pasta sauce
8 tablespoons parmesan--divided
8 oz shredded mozzarella cheese
16 oz penne pasta, cooked and drained
Combine sauce and 6 tablespoons parmesan in 13x9 dish. Fold in uncooked chicken. Cover, bake @ 375* for 30 minutes. Uncover, top with mozzarella and sprinkle with 2 tablespoons parmesan. Return to oven to melt cheese.
Serve chicken and sauce over cooked penne.
I added to the pasta after it was finished cooking a small can of tomato sauce and about a tablespoon of sugar so the pasta wouldn't get all "glued" together.
Foil Meal Recipe:
1.5 pounds ground beef
(salt, pepper, aluminum foil)
1 large onion, thinly sliced
1 large baking potato, thinly sliced
4 carrots, thinly sliced
4-6 tablespoons butter
Form meat into 4-6 1/2 inch thick patties. Season with salt and pepper. Lay each patty on a large square of aluminum foil. Top each with a few slices of onion, potato, and carrot. Top each with 1 tablespoon of butter, add more salt and pepper. Wrap tightly in foil, rolling ends to completely seal the package. Bake in 375* oven for 25-30 minutes. I wish I would've had biscuits to serve with it but I was to lazy to make them and I didn't have any frozen.
Honey Mustard and Bacon Chicken
1.5 pounds boneless chicken breasts, pounded
1/4 cup honey mustard
1 bag real bacon pieces, (I just fried up some bacon)
4 ounces shredded mozzarella
2 tablespoons oil
salt/pepper
Salt and pepper chicken. Saute chicken in heated oil on med-high approx. 7 minutes on each side. Brush tops of chicken with honey mustard, then chopped bacon, then cheese. Cover skillet to melt cheese.
